This video is specifically aimed at retail establishment owners—such as mom-and-pop shops, larger grocery stores, and any location that sells eggs directly to consumers.
Safety and Warning Requirements for Shell Eggs
Under Title 2 of the Oklahoma Statutes, which governs Agriculture, there are specific warnings and safety requirements in place for the sale of shell eggs that have not been processed to eliminate live salmonella. In other words, these are raw eggs that might still carry bacteria.
According to Title 2, Section 10-72.1, retail establishments selling such eggs must display a very specific warning label. That warning reads:
SAFE HANDLING INSTRUCTIONS:
To prevent illness from bacteria:
– Keep eggs refrigerated
– Cook eggs until yolks are firm
– Cook food containing eggs thoroughly
These instructions are crucial for preventing salmonella infections and protecting public health. The Oklahoma Department of Agriculture enforces these regulations to minimize the risk of disease transmission, not just to humans, but potentially to other animals as well.
