To get the simplest part out of the way first: packer facilities must follow USDA requirements for refrigeration and storage of eggs. Now, for everyone else involved in retailing eggs, here are some of the key requirements you need to be aware of:
Essential Temperature Standards for Egg Storage

- Eggs must be stored at an ambient temperature of 45°F or lower.

- If the eggs are not kept at that temperature or below, they will likely need to be destroyed.

- Retail owners are required to post signage displaying these refrigeration and storage requirements, so that employees are always aware of the standards.

- Again, if these procedures are not followed, the eggs may have to be destroyed under the supervision of a Department of Agriculture agent.
